Stephen Starr, the restaurateur behind Le Coucou in New York, built a 1930s Hollywood steakhouse at Bal Harbour Shops, with checkerboard marble, pale yellow banquettes and murals by New Yorker illustrator Christoph Niemann. Order the dark, crackly Delmonico and save room for pink Champagne cake.

Eyal Shani, the Israeli chef who made a whole roasted cauliflower famous, goes Italian in a courtyard of jasmine and bougainvillea around an artichoke fountain. Handmade pasta is the point, black pepper and lamb ragù among them, and dinner starts with bread and olive oil.

Abram Bissell grew up in the Keys and cooked at Eleven Madison Park, and here he points the menu south: conch ceviche, Key West pink shrimp, a lobster and mussel sancocho. The room has porthole windows and ocean tones, and the kitchen skips seed oils, if that’s your thing.
