The Tâm Tâm crew’s quieter sibling: a Saigon noodle shop with a spice-forward southern phở, bánh xèo and a whole fried fish to wrap in lettuce. Most tables are kept for walk-ins, so “no availability” online is more of a dare than a no.

The Cotoletta people have opened a dark-pink osteria with a handwritten menu of fresh pasta, lasagna and a proper cotoletta alla milanese. You book by calling a phone number, which their Instagram calls “reservations like it’s 1999.”

Ten seats at a hinoki counter under a wooden “wave” built by KTX ArchiLAB, the Japanese firm’s first project in the U.S. Glen Kotlar serves 17 Edomae courses, and the restaurant’s Instagram devotes whole posts to its rice and its kohada, which is a very good sign.

Chef Anthony Verastegui runs a 12-seat counter in a North Miami Beach strip mall, making Peruvian ceviches and tiraditos with Japanese technique. Michelin gave it a Bib Gourmand, its nod to great cooking at fair prices, and the tuna tataki with rocoto pepper is a good place to see why.
